Varieties of grapes used: Syrah

Elaboration: The variety Syrah is cultivated in vineyards located at a height over 700 meters, where day and night temperature variations allow for the perfect maturation of the grape. The hand-picked grapes are brought to the winery in crates of 20kg each. After stripping the grapes from the stalks, the fermentation process is started in stainless steel tanks at a controlled temperature.

Maturing and aging: No aging in wood.

How to serve: To be served at 18 degrees C.

Organoleptic characteristics: Cherry and black fruit flavours, liquorice and overripe fruit. Vigorous and warm wine. Vigorous, flavoured in mouth, well balanced and unctuous.

Appelation of Origin:  Malaga.

Varieties of grapes used: Moscatel de Alejandria (Moscatel de Malaga)

Elaboration: Wine from the variety Moscatel de Alejandria, cultivated on the Axarquia hills, which slaty soil produces superior quality grapes. The grapes are picked by hand and are laid out to dry in the sun on the “ paseros”. Until its optimal graduation is obtained. The sun-dried grapes are then brought to the traditional “capachas” press, to obtain a grape must with a high sugar content, followed by a very slow fermentation process.

Maturing and aging: 10 years in American oak casks.

Analytical features: Actual alcoholic strength by volume of 15%.  Reducing sugars: 300 gr./l.

Organolaptic characteristics: lodine tone with amber background, sweetness of candid fruit, spicy. Flavoured in mouth, fleshy, persistent and well-balanced.

How te serve: To be served between 14 and 18 degrees C.. As a dessert wine.

Maxim's Bordeaux

Wine obtained from Sangiovese grapes and from those of other international species of grapes grown according to the high-density system. The entire manual care of the grapes before ripening and drastic thinning of the bunches enables a maximum yield of about 700/800 g per stem to be obtained.

The grapes are picked by hand and placed in crates that are taken immediately to the cellar where they are selected on a double selection belt.

After separation from the stalks, the grapes drop due to gravity into tanks in which they ferment for 25-30 days. The product is then devatted and transferred to 10-hl barrels and then to barriques for about 18 months, after which it is blended and then bottled, following which it undergoes about 6 months of ageing in bottles.

The barriques used, plus the short ageing period, make this wine pleasantly fresh and easy to drink.

The fruity sweetness
Aged 24 months on lees in the cellar. From a sandy clay soil, 70% from the massif of Saint Thierry and 30% from the Montagne de Reims in Rilly la Montagne and Villers Allerand, two villages classified in Premier Cru.

Its character
This blend of three grape varieties is characteristic of the authenticity of Champagne. The catch of foam is long after the bottling to give the finest bubbles possible. The liquor added during the disgorgement is passed in wood barrel to give slight woody notes in the smooth champagne wine, fringed with hints of white flowers,almonds and honey.

Food and wine harmony

Served chilled as an aperitif, it is a delight. This champagne goes well with natural foie gras, or with gingerbread. It will also suit with a dish that combines sweet and salt. The champagne can accompany a dessert such as a chocolate cake or an apple crumble.

Winemaking and Composition
This plot-grown wine comes from La Grande Montagne de Reims, a 1st classed growth vineyard. It has a mineral Character thanks to its chalky sub-soil and boasts rich and complex aromas underlining the greatness of the terroir.
Its character The Blanc de Blancs is a single grape variety champagne, entirely made from CHARDONNAY, a white grape, giving it freshness, subtlety and elegance.
Its butter and brioche bun aromas are particularly appealing. This champagne can be enjoyed straight away, but if you are prepared to wait several years, it will develop grilled and roasted notes.

Food and wine harmony
Its lightness is pleasant for the aperitif, however its subtelty and superb freshness on the palate also allow it to combine perfectly with pan-fried scallops in citrus juice or with turbot in champagne sauce, naturally.

Winemaking and Composition
This blend is typical of champagne where red wine is added to white wine enabling the creation of Champagne Rosé Michel Fagot 1st Growth. The Champagne region is the only one authorized to make rosé from blending. Champagne winemakers can choose their methods to produce rosé: running off or blending.
We have chosen blending, in order to give the wine red fruit notes.

Its Character
This rosé with a lively coloured robe stands out through its elegant and fruity bouquet.
Aromas of stewed strawberry and vanilla can be found. On the palate, the small red fruitnotes provide it with an exquisite Body. The finish is long and creamy.

Food and wine harmony
Champagne Brut Rosé is an ideal companion for white meats and grilled meats. It is also perfect for desserts such as red fruit charlotte or cheesecake with raspberry sauce.

The choice of grapes from our oldest vines (aged approximately 50 years) gives this great vintage of 2004 character and personality. This champagne wine is grown uniquely on the slopes of La Montagne de Reims, 1st.growth.

Its character
Its structure full of elegance brings forth hints of gingerbread, toasted brioche buns and toasted bread. It is a thoroughbred champagne, of excellent vinosity, whose finish will surprise you.

This is a vintage 2004 and oaked during 10 months.

This champagne wine, thanks to its body and vinosity, can be perfectly matched during a meal with strong flavoured dishes such as a Chateaubriand steak with morel mushrooms, or can be enjoyed at the end of a meal as an after dinner drink.

Winemaking and Composition
Made during a year in which the wines boasted especially remarkable balance, the 1999 vintage of Cuvéé Michel Fagot is emblematic of the oldest plots in our vineyards. The yields are therefore very limited and a specific date is defined for grape-picking. The result is a fine expression of aromas and excellent potential  for ageing.

Its Character
This golden-coloured vintage has an exuberant character, is big and long on the palate with a nose of grilled and roasted notes which develops into the expression of an ample, complex and rich bouquet. The Chardonnay and Pinot Noir grape varieties provide vanilla notes thanks to their ripeness and ageing. On the palate, white fruit, Mirabelle plum and plums are evident, underlining the mature character of the vintage. The finish is fresh and captivatingly long.

Food and harmony
This champagne can be tasted at many different moments: for the aperitif, with roast beef rib and girolle mushrooms during the meal, or after dinner, but also with pan-fried foie gras and morel mushrooms or for an atypical combination, such as with sushi.

Winemaking and Composition
The year 2002 has enjoyed sun all year round and especially during the harvest to bring concentration in grapes and a very good health. For the disgorgement, the addition of liquor will be low considering the amount of sugar already present in the wine. This champagne comes from the heart of the Montagne de Reims in Rilly la Montagne and Villers Allerand.

Its character:
This vintage has a nice acidity asking for time to blend. After ten years, this vintage is starting to have good maturity. The bubbles are a delicacy unmatched due to a very slow fermentation. The nose is made of nice notes of dried fruits, hazelnuts, almonds and liquorice. A palate made of good balance and a gourmet squale with lemon touches.

Food and wine harmony
This champagne can be enjoyed in many occasions:aperitif, with a side of beef with mushrooms or with a pan sautéed foie gras with morels or an unusual encounter with sushi for example. You can as well serve it as a digestive after meal.

Born into an exceptional year, an early harvest under the sun, perfect health and a high sugar content, worthy of the greatest vintages. This champagne comes from Rilly la Montagne and Villers Allerand. Compare to the Chardonnay and the Pinot Noir, the Pinot Meunier is growing much quicker, that’s why we don’t put any Pinot Meunier, in order to keep the vintage longer.

Its character:
This champagne has a nice fullness in the mouth, nose exhales sweet exotic flavour, pineapple, passion fruit and vanilla. Its dress is a lovely pale gold and the bubbles are full of finesse. Its character gives it flexibility and seating. The sugar that is
naturally found in the champagne maintains the soft structure and elegance of this wine.

Food and wine harmony
This champagne may be accompanied by a warm foie gras with apples, a Bresse
chicken with truffles or a game terrine.
Its scale and suppleness will make a great dinner companion.

Orhora
Orhora is a white wine based on the varieties Verdicchio, Viognier and Sauvignon Blanc. Its particularity is due to the position of vineyard it comes from, situated on the top of the hill at 430 metres a.s.l. with a Nord-Eastern exposition.

This vineyard is the first to see the new born day and to receive the caressing light of the sun rays.

The grapes are hand-picked early in the morning and then immediately brought and worked in the winery. The most of the single varieties is fermented separately, the Verdicchio is partly barrel-fermented and partly fermented in stainless steel tanks, while the Viognier and the Sauvignon Blanc are both barrel-fermented. The barrels are all used, the ageing of the wine in barriques and stainless steel lasts about 5 months. The wine obtained is round, complex and fresh at the same time, with a good structure and acidity. The ageing in a bottle lasts minimum 2 months.

Wine produced in the hills near Siena from thickly planted vines.
The entirely manual canopy management associated with drastic thinning of the bunches when they start to ripen leads to a yield of 700 to 800 g  per stem.

The grapes are hand picked and placed in small crates that are sent immediately to the cellars where they are carefully selected on two selection conveyors. The grapes, separated from the stems, falls by gravity into tanks where they are left to macerate together with the skins for about 25 to 30 days. At the end of this stage, the Syrah is transferred to barriques while the Sangiovese is placed in French oak-wood tonneaus, selected with a suitable ratio of new to used depending on the vintage, in which
malo-lactic fermentation will take place.

After being blended and returned to the wooden barrels for a further year of maturing, the wine is aged in bottles for about 12 to 18 months before it goes onto the market.

This wine is obtained from vines grown on the hills around Siena, where they are planted with a high density. Cultivation features careful canopy management and drastic thinning of the bunches of grapes.

The maximum yield reached is 700 to 800 grams per stem.

The grapes are hand-picked and placed in crates in which they are sent immediately to cellars where they undergo strict selection both of the bunches and of the single grapes, on two selection conveyors.
The drawn off wine is immediately transferred to French oakwood barriques to undergo malo-lactic fermentation. Upon completion of this stage, the wine is blended and placed back into barriques to mature for another year.

After bottling the wine undergoes 12 to 18 months of aging.

Il Pugnitello is a wine obtained from the homonymous ancient variety from Tuscany. Il Pugnitello gives birth to a wine with an unusual aromatic profile, particular and intriguing.
The yields are naturally low, about 3000 kg grape per hectare, the bunches are very small, with the characteristic shape of a fist (pugno in Italian) from which derives its name.

The grapes are hand-picked then immediately sent to the cellar where a careful selection is made, both of the bunches and of the single grapes, on a double selection belt.

The grapes drop by gravitation into the tanks where they undergo a slow and gradual fermentation for about 25-30 days without the addition of selected yeasts.

The wine evolves in 10hl-barrels for about 12 months and later in a bottle for at least an year. The intense color with viola nuances, the good acidity, the finesse and the pureness of the characteristic perfumes of this rare indigenous variety, make the Pugnitello a wine with a great personality shaped by its terroir of origin.

Ideal with lobster stew and a toast with grated black truffles, olive oil and salt.

NOSE:
A very suggestive aroma, fresh and powerful at the same time, which lets us discover that we are in front of a sweet dessert cava.

White frosty fruit aromas, caramelized citrus and white flowers. Fine tones of macerated spices (slight hint aniseed) and raisin touches. Bakery memories.

TASTE:
Fresh, tasty, creamy and very sweet. Perfect acidity and good presence of perfect carbonic integration. Intense sweet fruit notes and raisin memories. Sweet.

Controlled fermentantion after obtaining its colour in contact with the rind. The obtention of the colour depends every year on the stage of ripening of the grape, more or less time of maceration.

Obscure shades with purple reflections with vertical tears of glycerol.

NOSE:
Floral, intense and clean, very typical of the varietal Cabernet with undertones of very sweet oak.

TASTE:
The attack is smooth and harmonious, the final is very round for a 2007 vintage.

Intense and endless fruity aromas, where exotic fruits (passion fruit, papaya) blend with peach dashes and grapefruit memories.

Elegant and well structured with a very good acidity that makes it fresh. Then the fruit becomes the main character, with some vegetable memory, resulting in an expressive, tasty wine with an invitingly sweet taste. It has an aromatic finishing touch that leaves very pleasant sensations

Intense ripe fruit aroma with toasted tones. With nuances of long aging and good rim.

A powerful and meaty attack in the mouth with hints of green pepper, glycerine touch at the end of the mouth leaving the palate with a good taste.

WINE-MAKING PROCESS AND AGING:
Aging in french oack barrels and then in american oack barrels. For its natural elaboration method, it has been subjtect to no filtration process.

GASTRONOMY:
Goes well with all types of cheese, cured sausages, meats and smoked fish.

Type of wine: Vino seco moscatel.
Origin: Sierras de Malaga
Grape variety: Moscatel de Alejandria ( Moscatel de Malaga )

Preparation: The variety Moscatel de Alejandria is grown in the sunstruck area of Axarquia(eastern part of Malaga), a mountainous region with impressive rugged hills on soils covered with decomposing shale. The climate is warm and dry. The grapes are picked manually and kept in crates. The fruit is collected before the berries start drying on the vine to obtain aromatic musts with a sufficient level of acidity which will give the wine its character and freshness.

Riping and aging: Not riped in wooden barrels.

Characteristics: Pale yellow with touches of green,brilliantly clear and very lively in the glass. The wine’s nose is characterised by its olfactory intensity; its fragrances of pineapple, papaya, the scent of dried figs, cake and balsamic notes make it a complex and seductive wine.  Tasting and qualitative aftertaste.

Serving: Ideal serving temperature between 8 and 12 degrees C.    Drink it as an aperitive with tapas, snacks,etc.   Also with fish and seafood.

This "Vin de Pays" is coming from the vineyards of the sunny Languedoc region. It comes from the Merlot, prestigious grape variety of the Bordeaux vineyards. Full and round, it has a crimson colour and reveals fruity red berries aromas as well as vegetal hints.

To be served between 15° and 18° C with cooked meat, poultry, white meat and cheese
This "Vin de Pays" comes from the Languedoc region’s vineyards. It is made with Chardonnay grape, one of the most famous grape variety. A pale gold colour and an expressive bouquet of small yellow plum and floral tones with a hint of citrus lead to a palate that is at once full, soft and elegant.

To be served at 10° C with shellfish and fish.
